I have hollandaise sauce down to perfection...
I take the egg yolks and put them in the blender and mix them. Then, I have a measuring cup with butter melted and a little lemon juice and I get it really HOT - boiling - in the microwave. I slowly trickle it into the blender while it's on. I usually re-heat the butter a couple of times over the course of the trickling.
It comes out perfect. And trust me - I had tried many other ways of making it before I tried this. It's the best and easiest way.

I've had some major neck/back issues the past week and finally ended up having to take some Flexiral for it so I've been really fuzzy the past couple of days and thought I'd had some major brain fart.
