I make guacamole for one with avocado, the way I like it - with red onions, tons of garlic and lime juice, no tomatoes, and no chunks of avocado. There are never leftovers.
Avocados are also something I wish I liked more. I can only sometimes eat it in guacamole form. Plain ones make me gag from texture issues.
I never liked avocado until a few years ago. Then I suddenly loved them. I usually cut them in half and put them cut side down on a plate and put it in the fridge. If there is any brown, I'll cut it off before I use it.
Sitting here with PK and Peachy and Eli and T3 and Mare, gagging in your general direction. I can only eat a tiny sliver in sushi and that's if I try really hard not to think about it.
I try to leave the pit in the half I'm not using. Then I dab a little lemon juice over the cut part of the avocado, cover with saran wrap and put in the fridge.
I can't think of anything witty to say for my signature line.
